About The Coffee

We buy seasonally so the components for our Red Stag espresso blend change throughout the year, but we always aim for a cup that is sweet and fruity with a lovely chocolate finish. We’re proud to offer a coffee that can stand alone as espresso but is equally phenomenal in milk.

Our aim with Red Stag is to offer a consistent and reliable blend for our all our customers, whether they're a specialty cafe owner or an enthusiastic home espresso brewer.

Fazenda Piao Morro Grande (which translates as 'Cowboy Mountain' in the local vernacular) is situated at 950 to 1150masl spanning 74ha and produces roughly 2200 bags of coffee a year, even with only half of the farm dedicated to coffee production. Run by third generation brothers Rafael and Leo who returned to their family farm after studying Law and Agronomy respectively. Initially, the farm was predominately dairy focused. Gradually, the potential for coffee farming was realised. By the late 90s the family was seriously developing their coffee growing capacity. With the addition of the skill set of a trained agronomist, the quality of the coffee produced increased dramatically. Their coffee is processed on the farm, with the drying of the beans taking place on the patio all but two days a week during the picking season. The brothers utilise one day guardiolas, which are barrels that ensure the consistency of the coffee produced. They mitigate the effects of the changing weather from day to day. This helps to ensure the reproducibility of the cupping across any bag of their coffee as well as their lots year on year.

Falcon Coffees Peru, our import partner for this coffee from Cajamarca, collaborates with a local exporter that was founded in 2017, which works with over 3,000 smallholder producers from cooperatives across Jaén, San Ignacio, and Cusco. Their focus is on building sustainable relationships, socio-economic development, and environmental preservation. This partnership supports a wide range of specialty varieties like Pache, Geisha, and Bourbon, processed through natural, washed, and honey methods. Certified by USDA Organic, Fair Trade, and Rainforest Alliance, they emphasize quality and traceability from farm to export. This partnership is centered around strong community support, enabling farmers to maintain production consistency, improve income, and benefit from educational resources. Collection centers ensure quality control and logistic support, while farmers receive technical assistance, focusing on organic pest control and post-harvest improvements.

Kalingwe is a village in the northern part of Kasese District situated in one of the many valleys of the foothills of the Rwenzori Mountains. Agri Evolve established a buying centre here for the farmers of Ibanda and the surrounding communities higher up on the hillsides. Farmers typically have between 1 and 2 acres of land and coffee is their main cash crop. Ripe, red coffee cherries are harvested daily during the harvest season and taken to Ibanda. The cherries are weighed, assessed for quality and the farmers are paid in cash. From here trucks carry the cherries to the Agri Evolve coffee station where the cherries are floated and graded before being sun-dried.

Glen Lyon coffee

Glen Lyon Coffee was set up by Fiona Grant in 2011 at the top of one of the most beautiful glens in the Scottish Highlands. She installed a five-kilo roaster in the bothy next to her house and started selling small batch roasts at local farmers markets. The first years were the hardest, with no staff and no heating in the bothy through the winter. The biggest challenge was getting lorries to deliver green coffee along 10 miles of single-track road, with several having to be regularly dug out of snow drifts!

In 2014 we moved the roastery lock, stock and barrel to Aberfeldy, a cool little town on the banks of the River Tay. Here we invested in a 12 kilo Probat roaster (which we still use today alongside our 25 kilo Probat) and employed our first team member to help roast and deliver barista training. The business has grown steadily and we are now a team of ten, supplying freshly roasted speciality coffee across Scotland and beyond.

Our roastery is a bright and airy space with plenty of room for two Probat roasting machines, a cupping lab, a retail and café area and outside decking for seating and events. We are open to the public for coffee, pastries, beans and merch Monday to Friday from 9am to 4pm.
