About The Coffee

Our second harvest from producer Consuelo Rubio (alongside her Q-processing trained daughter, Blanca Flor) and her farm Finca San Francisco.

We loved the bright clean florality of this lot last year - and having requested our allocation be packed in vac-bags this year - we think it’s landed in impeccable form. Whilst the Quebraditas Sidra was process led, this is very much a clean coffee showing the Sidra cultivar expression.

The Story

*Regarding the processing:
Both Conscious and ourselves were under the impression this year's lot was processed in the same style as the 23/24 season, and the first round of bags have been labelled as such ("Anoxic Washed"). However, we've been informed by Blanca that due to the cherry maturity and the temperature at the time of processing, this year they decided to process in the more traditional style of washed - open tanks and a shorter fermentation. We noticed that the quality was great this year, and if anything we were keen to get a few more washed coffees on the offer, so we're quite happy with the end result in the cup.
We're unable to resolve the labels until our next roast day, but we want to be transparent about what has happened.

Conscious & Finca San Francisco, as we wrote it last year:
We came across indie importer “Conscious” via their founder Culiann’s triumph at the inaugural Extracted Development competition. Seeing that Culiann won using a Peruvian coffee he had imported, and that he was running a super considered, transparency driven single origin focused import concern - we reached out to discuss the upcoming Peruvian harvest. Having had a super productive call in September we realised our company values were aligned and we started discussing offer samples. 

Conscious has been working with a small number of smallholder farmers in Peru, with strong relationship buying and a commitment to return year on year. The work they have put in championing these producers clearly shows - all coffees were at a minimum 85+ with perfect moisture and water activity. It was hard to whittle down to select the lots we would showcase, but in the end we selected 2 and made firm commitments.

The first is from producer Consuelo Rubio and her daughters Blanca and Roxana, and her son Richard. They have a small Finca in the village of El Lirio, which sits high up in the Andes in the Jaén province of Cajamarca. We love Peruvian coffees - they are capable of producing really concentrated, dense profiles, utterly unique for South America, and with a more traditional approach to processing than might be found in the competitive market of neighbouring Colombia. 

Prior to the agrarian reforms initiated in Peru in 1969, the country's land ownership system was deeply entrenched in a semi-feudal structure, which had been in place for centuries. This system was characterised by a powerful landowning oligarchy, which maintained control over vast areas of land, exploiting the labour of campesinos (rural workers) and indigenous people. The landowners, or hacendados, held significant social and political influence, perpetuating a system where a small elite controlled the majority of productive land, while the majority of the rural population lived in poverty and had little or no land to call their own. Consuelo’s father was a farm manager on one of these estates

Agrarian reforms in Peru, particularly those initiated in 1969 by the leftist military government of General Juan Velasco Alvarado, were part of a broader movement across Latin America, where land redistribution was seen as a means to address long-standing social inequalities and injustices, particularly towards indigenous and peasant communities. Following these reforms, Consuelo and her husband purchased a parcel of the land Consuelo’s father had previously managed for an estate owner, planting their first plots of coffee trees in the 90s.

Their initial focus was on the cultivation of Typica, Caturra, and the rust resistant Timor hybrid, but a gift of Sidra plants from a friend of Consuelo’s late husband turned out to be an unexpected boon. Initially ignored, these plants turned out to be resistant to a rust outbreak on the farm. Further planting and picking separation found that the cup profile was excellent, and the variety has now become a significant part of the farm’s production. 

The Sidra variety itself has an interesting history - thought initially to be a cross of Bourbon and Typica from a Nestlé run variety garden in Ecuador, recent genetic testing has shown closer similarity with Ethiopian landrace genetics. This attests to the unique flavour profile (fruity, bright, floral, often with a unique pleasant herbality) and similarity with other land-race varieties (Ethiopian genetics recently adapted to Central and Southern American conditions) such as Rosado, Gesha, and Ombligon.

Consuelo runs a tight ship at Finca San Francisco - her daughter Blanca has attended Q-processing courses, and the meticulous care taken with fermentation and processing shows. Rigorous picking, careful note taking and experimentation clearly show in the cup, and excellent drying protocols (40 days of slow drying for a washed coffee!) mean we think this coffee could well open up quite a bit further in the course of its run. It’s already showing huge potential at this very fresh stage

We won't assert that we are the best, the most sustainable, ethical, unique roasters around. What we will claim is that we will genuinely strive to do our best, to continually improve, and to present our wins (and our failures) openly. As we grow, our ability to have a positive impact grows too.

But to stand for nothing would be to shirk responsibility. We’re committed to ethical business practices, especially when it concerns transactions with marginalized groups, acknowledging the global climate crisis, and embracing the concept of a circular economy. Each year, we’ll release a straightforward report that allows you to hold us accountable for our actions, while we navigate the challenges of sustainability as a small business.

We appreciate and respect every actor in the coffee value chain. We believe that each actor, from the farmer to the importer to the consumer, adds a unique layer to the coffee experience. We will seek to promote and facilitate connections between each layer, and we look forward to inviting you to our community and revealing more of our plans in this area. 

Instead of asserting a mission to 'educate' consumers, our philosophy as Scenery is not to teach, but to share. For those who desire to delve deeper into the world of coffee, we are an open book, offering a view “behind the scenes”. But for those who simply enjoy their brew, we respect and value your choice.

We value fairness over profit and in our commitment to this, we don't shy away from delivering a broad range of coffee offerings, each embraced and appreciated for both the joy of its purpose, and of its unique values. Understanding the balance between cost, quality, and ethics in coffee sourcing isn't always easy, and as part of our honest discourse, we will try and share what the challenges are in balancing these three elements without sacrificing the latter.

Because of this, we offer responsibly sourced coffees at different price points,  Some are simple, everyday brews that are easier on the wallet. Others might be more special, a treat for the taste buds, and a nod to the hard work of the farmers.

We have a particular interest in sourcing coffees that offer higher value addition for producers, high impact buying, as well as progressive processing. 
Working with importers we commit to purchasing coffee early, whilst it is still in origin, and release coffees as they land in the UK - ensuring our offer changes with the seasons and producers are given a surety to their sales.

From an everyday brew to an extraordinary special release, our aim is to do the best we can without overstepping our ethical boundaries or sacrificing on quality. No grandiose promises, just a genuine attempt to do right. And in the end, showcasing the wonderful flavours of coffee, each lot a captured snapshot of the tropical scenery upon which it was grown.
