About The Coffee

A beautifully clean and juicy natural from smallholder producers in Bookkisa, a kebele in the Shakiso district of Guji. Grown at 2,000–2,150 MASL among the lush forests for which the region is known, the cherries are delivered to the Bookkisa washing station, operated by Sookoo Coffee. Careful drying and rigorous picking and sorting result in a natural with loads of sweetness and clarity: blueberry, honey and raspberry.

The story

Sookoo Coffee is a family-owned producing and exporting company based in Guji, led by producer Ture Waji, affectionately known as the “King of Guji” for his deep and longstanding connection to the region and its coffee-growing communities.

Sookoo operates across three woredas (districts) in East Guji — Shakiso, Uraga and Haro Welabu — working with small groups of local farmers who deliver their cherries to Sookoo’s drying stations. Between harvests, the team provides farmers with training in agricultural and harvesting practices, helping to improve both quality and productivity from year to year.

This lot is made up of two varieties: Gibirinna 74110 and Serto 74112. Both are part of the “Meta Bashari selections”, a group of varieties identified and developed by the Jimma Agricultural Research Center (JARC) in the 1970s. The varieties were selected from coffee growing in the forests of the Meta Bushari region, in part for their resistance to coffee diseases, and have since become some of the most widely planted varieties in Ethiopia.

To be conscious is to be aware, self-reflective and to make considered choices. Through being conscious we work to deliver the best coffee for everyone. Practically, we do this by working closely with our partners at every stage of the production of coffee, from farm to cup, constantly learning, teaching and sharing. In this way, Conscious aims to be an agent for progress, and for strengthening connections between people in a complex and messy world.

We roast coffee to produce aromas and flavours that celebrate the innate properties of the beans and the work that went into their production. We start by understanding the physical properties and unique precursors of flavour of each coffee lot. We then meticulously plan and fine-tune every roast to develop these flavours. Through continuous testing and iteration we strive for perfection.
