About The Coffee

Marbles & Conkers is our space for coffee experiments gone right — a series celebrating the edges of innovation. From wild fermentations to unique drying methods, every lot explores texture, sweetness, and surprise.

This release comes from Huila, a region synonymous with Colombian coffee excellence. High altitudes, volcanic soils, and smallholder traditions converge to produce some of the country’s most complex profiles — and this one pushes even further.

The process? Ripe cherries are handpicked, depulped, and rinsed, then placed into controlled fermentation tanks. Fresh fruits, spices, or botanicals are introduced at the fresh cherry stage, encouraging specific microbial activity. Think of it as culinary precision, but for coffee — pulling distinct, natural flavours into the heart of the bean without overwhelming the coffee’s own character.

The result is unmistakable: juicy lychee, ripe melon, bright lemon, a lingering sweetness, and a soft spark of yellow ginger. Balanced yet playful — a coffee that tastes as lively as it sounds.

Built on the backbone of Caturra, a variety loved for its adaptability and nuance, this lot captures everything we love about Huila: craft, culture, and a little bit of magic.
