Gargari Gutiti

Gargari Gatuti washing station is a cherry processing facility in Banko Gedeb, specialising in experimental processes. This anaerobic natural microlot is sourced from local smallholder farmers whose cherries are processed centrally at the station. Gargari Gutiti sits at 1983masl and is notable for its highly strict and uncompromising standards. The farmers in this region typically cultivate Jarc 74110, 7412 and 74165, sub-varieties of traditional Ethiopian heirloom varieties on small garden plots around their homes. This lot is naturally processed with an extended anaerobic cherry fermentation in vacuum sealed drums.

This lot utilised a double carbonic maceration fermentation in stainless steel tanks - one cherry fermentation and a second after pulping with fresh pomegranate juice. Ripe coffee cherries are introduced to the tank and CO2 is flushed to create an environment without presence of oxygen (anoxic). The cherries are fermented in this environment for 5 days (120 hours.) The cherries are then removed and de-pulped but the leached liquor from the fermentation is preserved. The pulped coffee is then fermented a second time with a leached liquor from the first fermentation as well as fresh pomegranate juice. This second fermentation takes 3 days. Finally the coffee is dried on raised beds as a honey process until the optimum moisture content has been reached.

Goro

Buno Coffee Trading is a small exporter which manages 7 washing stations in the area of Guji in Ethiopia’s southern region. With an altitude of over 2000 MASL and a wealth of young, healthy trees, Guji hosts ideal conditions for producing outstanding cup qualities. Not only this, but coffee is grown under a canopy of native shade trees and the local soil is volcanic fertile red soil.

Gedeb

The coffee is naturally grown under shade trees, primarily Ensete (false banana tree). The best cherries are bought from nearby farmers. Coffee is initially floated to remove quakers, then placed on drying beds for 12-15 days. Green beans are handpicked by local women. The grade 3 is coffee that cups 84 + with a greater defect count of between 13-25 defects.
