About The Coffee

Our first Cricks Corner × Conscious collab comes from Luz Ángela Rojas and her partner, Edinson Argote. Together, through their joint project, Quebreditas, they’ve been pushing the boundaries with processing and producing some of the most exciting lots coming out of Colombia right now. This one is a real treat: a caturra chiroso that bursts with mango, cherry and strawberry. A proper fruit parade!

Luz Ángela grew up on her family’s coffee farm, Chorro Alto, but initially took a different path, studying at university and working in healthcare for several years. Covid brought her back home, and once she was there, she threw herself into improving and innovating the farm’s practices.

Meanwhile, Edinson was deep in the world of processing, honing his expertise as Head of Quality at one of Colombia’s most pioneering coffee farms. Together they formed Quebreditas, where they’ve since been exploring considered, quality-driven approaches to coffee processing.

This Caturra Chiroso was grown at Chorro Alto, then processed using methods the pair have developed at Quebreditas — resulting in this fun, fruit-packed belter.

Harvested cherries are first floated in water to remove green, overripe or dried fruit. They then go into a sealed tank to ferment for 48 hours. After that, water is added (kept below 25°C) for a further 48-hour fermentation. Finally, the coffee is mechanically dried at 38°C for 72 hours.

Conscious

We are Culainn and Lea, the team behind Conscious. We began our journey into coffee in South America, building relationships with a small number of producers, with whom we work today.

To be conscious is to be aware, self-reflective and to make considered choices. Through being conscious we work to deliver the best coffee for everyone. Practically, we do this by working closely with our partners at every stage of the production of coffee, from farm to cup, constantly learning, teaching and sharing. In this way, Conscious aims to be an agent for progress, and for strengthening connections between people in a complex and messy world.

We roast coffee to produce aromas and flavours that celebrate the innate properties of the beans and the work that went into their production. We start by understanding the physical properties and unique precursors of flavour of each coffee lot. We then meticulously plan and fine-tune every roast to develop these flavours. Through continuous testing and iteration we strive for perfection.
